  • 4 cups fresh rhubarb stalks, chopped
  • 3/4 cup granulated sugar
  • 1/3 cup water
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon (optional)
  • Fresh mint leaves (for garnish)

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Prepare the rhubarb by washing and trimming the ends. Chop into bite-sized pieces.
  • In a mixing bowl, combine the chopped rhubarb, granulated sugar, water, and vanilla extract. Toss until well-coated.
  • Spread the rhubarb mixture evenly in a baking dish and sprinkle cinnamon on top if desired.
  • Bake in the preheated oven for about 30-35 minutes, until tender and caramelized.
