Ingredients
  

Chicken

  • 2 large boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon lemon juice
  • fresh rosemary or thyme optional, for garnish

Instructions
 

  • Place the chicken breasts between two sheets of plastic wrap and pound to about 1/2 inch thick using a meat mallet.
  • Rub the chicken with olive oil and season both sides with salt, pepper, garlic powder, and onion powder.
  • Heat a skillet over medium-high heat and add a little olive oil if needed.
  • Cook the chicken for 4-5 minutes on the first side without moving it.
  • Flip and cook another 4-5 minutes until the internal temperature reaches 165°F (75°C).
  • Let the chicken rest for 5 minutes before slicing and serving. Garnish with fresh herbs if desired.

Notes

Store cooked chicken in an airtight container for up to 4 days in the refrigerator or freeze for up to 3 months. Reheat gently with a splash of broth or water to retain moisture.
