Ingredients
  

  • 2 cups grated zucchini
  • 2 cups all-purpose flour
  • 1 and 3/4 cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 teaspoons ground cinnamo
  • 1/2 teaspoon salt
  • 1 cup vegetable oil
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 8 oz unsalted cream cheese
  • 2 cups powdered sugar
  • 2 tablespoons milk

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan or line it with parchment paper.
  • In a large mixing bowl, combine the grated zucchini and sugar. Let this sit for about 10 minutes.
  • Add the vegetable oil, eggs, and vanilla extract to the zucchini mixture. Mix well until all ingredients are combined.
  • In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt. Gradually add the dry ingredients to the zucchini mixture, stirring gently until just combined.
  • Pour the batter into the prepared baking pan and bake for 25-30 minutes or until a toothpick inserted comes out clean.
  • While the bars are baking, make the frosting by beating the cream cheese until smooth, then add powdered sugar and mix until combined. Add milk to reach desired consistency.
  • Once the bars are done, let them cool for about 10 minutes, then transfer to a wire rack to cool completely.
  • Frost the bars with the cream cheese frosting, cut into squares, and serve.

Notes

Measure zucchini after grating; use freshly grated zucchini for more flavor. Frost completely cooled bars to maintain frosting shape. These bars can be stored in the fridge for a week, and they freeze well for up to three months.
