Ingredients
  

  • 4 ounces ramen noodles
  • 4 cups chicken or vegetable broth
  • 2 tablespoons chili oil
  • 2 tablespoons soy sauce
  • 1 tablespoon fresh ginger, minced
  • 3 cloves garlic, minced
  • 2 scallions, chopped
  • 1 cup vegetables (bok choy, mushrooms, or spinach), chopped
  • 2 soft-boiled eggs (optional)
  • 1 teaspoon sesame seeds (for garnish)

Instructions
 

  • Begin by boiling a pot of water. Once boiling, add in your ramen noodles and cook according to the package instructions, usually around 3–4 minutes. Drain and set aside.
  • In a separate pot, combine the chicken or vegetable broth and bring it to a simmer over medium heat.
  • Add the minced ginger and garlic to the simmering broth. Let these aromatic ingredients infuse the broth for about 5 minutes.
  • Stir in the chili oil and soy sauce. Adjust the amount of chili oil to your heat preference.
  • Next, add your vegetables. Allow them to cook until just tender, about 2–3 minutes.
  • Place the cooked ramen noodles in bowls and ladle the steaming broth and vegetables over the top.
  • If you’re adding soft-boiled eggs, slice them in half and place them on top of the ramen. Garnish with chopped scallions and a sprinkle of sesame seeds.
