  • 2 cups rolled oats
  • 1 cup all-purpose flour
  • 3/4 cup brown sugar
  • 1/4 cup maple syrup
  • 1/2 cup vegan butter, melted
  • 2 cups fresh raspberries
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemo
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Line a 9x9-inch baking dish with parchment paper.
  • In a large mixing bowl, combine rolled oats, all-purpose flour, and brown sugar. Stir and then mix in melted vegan butter until it resembles a sandy texture.
  • Reserve 1 cup of the crumble mixture for topping. Press the remaining mixture into the prepared baking dish to create a base.
  • In another bowl, combine fresh raspberries, lemon juice, lemon zest, vanilla extract, and maple syrup. Gently mix.
  • Spread the raspberry-lemon filling over the crumble base.
  • Sprinkle the reserved crumble mixture over the raspberry filling.
  • Bake for 30-35 minutes until the top is golden brown and filling is bubbly.
  • Let the bars cool for at least 20 minutes before cutting into squares.

Notes
