Ingredients
  

  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup coconut oil (melted)
  • 1 cup full-fat coconut milk
  • 1/2 cup maple syrup
  • 1/2 cup nut butter (like almond or cashew)
  • 1 cup dark chocolate (vegan)
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions
 

  • Preheat oven to 350°F (175°C) and grease an 8x8 inch baking pan.
  • In a mixing bowl, combine flour, powdered sugar, and melted coconut oil to form a crumbly dough.
  • Press the shortbread mixture into the prepared pan and bake for 15-20 minutes until lightly golden. Allow to cool.
  • To make the caramel, combine coconut milk, maple syrup, nut butter, and salt in a saucepan. Stir and cook over medium heat for about 10 minutes until thickened.
  • Pour the caramel over the cooled shortbread and smooth it into an even layer. Refrigerate for 30 minutes to set.
  • Melt the dark chocolate and pour it over the caramel layer, spreading evenly. Chill again until set.
  • Cut into squares or bars and enjoy!

Notes

Be patient with the caramel; it improves flavor as it thickens. Ensure the shortbread is completely cool before adding caramel. Use a warm knife to cut for clean slices.
