Ingredients
  

  • 2 cups rolled oats
  • 1 cup all-purpose flour
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamo
  • 1/2 teaspoon salt
  • 1/2 cup unsweetened applesauce
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 3/4 cup raisins
  • 1/2 cup chopped nuts (optional)

Instructions
 

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large bowl, combine rolled oats, all-purpose flour, baking soda, cinnamon, and salt. Mix well.
  • In a separate bowl, whisk together brown sugar, granulated sugar, applesauce, maple syrup, and vanilla extract until smooth.
  • Pour the wet ingredients into the dry ingredients and mix until just combined.
  • Gently fold in the raisins and chopped nuts, if using.
  • Drop dough balls onto the prepared baking sheet, spacing them about two inches apart.
  • Bake for 12-15 minutes or until the edges are lightly golden brown.
  • Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack.

Notes

Store cookies in an airtight container at room temperature for up to a week. Freeze for longer storage. Adjust baking time for desired doneness; slightly underbake for chewier cookies.
