Ingredients
  

  • 2 cups rolled oats
  • 1 cup peanut butter
  • 1/2 cup maple syrup or agave
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon (optional)

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine the oats, baking powder, salt, and cinnamon (if using). Stir well.
  • In another bowl, mix the peanut butter, maple syrup (or agave), and vanilla extract until smooth and creamy.
  • Gradually add the dry ingredients to the wet ingredients. Stir until just combined. Be careful not to overmix.
  • Using a spoon or cookie scoop, drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake in the preheated oven for 10–12 minutes, or until the cookies are golden around the edges.
  • Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Don’t overmix: A gentle hand when mixing will help maintain the cookie's chewy texture. Use natural peanut butter for the best flavor and texture. Chilling the dough helps if it's too soft. Store cookies in an airtight container.
