Ingredients
  

  • 1 cup vegan butter
  • 0.5 cup powdered sugar
  • 1 tsp vanilla extract
  • 0.5 tsp rose water adjust to taste
  • 2 cups all-purpose flour
  • 0.25 tsp salt
  • 0.5 cup ground pistachios
  • 0.5 cup chopped pistachios
  • powdered sugar for rolling

Instructions
 

  • Cream the vegan butter and powdered sugar until light and fluffy.
  • Add the vanilla extract and rose water; mix gently.
  • Add the flour, salt, and ground pistachios. Mix until a soft dough forms.
  • Fold in the chopped pistachios.
  • Chill the dough for 20–30 minutes.
  • Roll the dough into 1-inch balls.
  • Bake at 350°F (175°C) for 10–12 minutes.
  • Roll the warm cookies in powdered sugar.
  • Let them cool fully, then roll again for a snowy finish.

Notes

These cookies freeze beautifully and hold their shape well. Roll again in powdered sugar after thawing for an extra-snowy look.
