Ingredients
  

  • 1 cup (227g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 2 cups (240g) all-purpose flour
  • 1/2 cup (120ml) lemon juice (freshly squeezed)
  • 2 teaspoons lemon zest (from 2 lemons)
  • 1 teaspoon baking powder
  • 1/2 cup (60g) powdered sugar
  • 1/4 teaspoon salt

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish or line with parchment paper.
  • In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Gradually add in the all-purpose flour and salt, mixing until the dough comes together.
  • Press the mixture firmly into the bottom of the prepared baking dish to form a crust.
  • Bake for about 15-20 minutes, or until the edges are lightly golden.
  • While the crust is baking, whisk together the fresh lemon juice, lemon zest, baking powder, and powdered sugar in a separate bowl until combined.
  • Once the crust is slightly cooled, pour the lemon filling evenly over it.
  • Return the dish to the oven and bake for another 20-25 minutes, until the filling is set.
  • Allow the bars to cool completely in the pan on a wire rack, about 1 hour.
  • Dust with additional powdered sugar, slice into squares, and serve.

Notes

Use fresh lemons for the best flavor. Allowing the bars to cool completely helps them hold their shape.
