Ingredients
  

  • 1 cup grated zucchini
  • 2 cups all-purpose flour
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp ground cinnamo
  • 1/4 tsp ground nutmeg
  • 1/2 tsp salt
  • 1 large egg
  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup chocolate chips or nuts (optional)

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the grated zucchini, brown sugar, granulated sugar, oil, egg, and vanilla extract, mixing until smooth.
  • In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  • If using, gently fold in chocolate chips or nuts into the batter.
  • Drop spoonfuls of the dough onto the prepared baking sheet, spacing them about two inches apart.
  • Bake for 12-15 minutes or until the edges are lightly golden.
  • Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Choose firm zucchinis for best flavor. Cookies can be stored in an airtight container for up to a week or frozen for three months.
