Ingredients
  

  • 1 cup grated zucchini
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease an 8x8-inch baking dish or line it with parchment paper.
  • In a large bowl, combine the granulated sugar, brown sugar, and vegetable oil. Mix until well blended.
  • Add in the eggs and vanilla extract. Whisk until the mixture appears light and glossy.
  • In a separate bowl, sift together the flour, cocoa powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Gently fold in the grated zucchini and chocolate chips if using.
  • Pour the brownie mixture into the prepared baking dish and spread it evenly.
  • Bake for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  • Remove from the oven and let it cool in the pan for about 10 minutes before transferring to a wire rack.
  • Once cooled, cut the brownies into squares and serve.

Notes

Always grate your zucchini ahead of time to release excess moisture; use high-quality cocoa powder for a richer taste.
