  • 2 medium zucchini, grated
  • 1 cup all-purpose flour
  • 3 large eggs
  • 1 cup shredded cheese (mozzarella or cheddar)
  • 1 small onion, diced
  • 2 tablespoons olive oil
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh herbs (optional, to taste)

Instructions
 

  • Preheat your oven to 375°F (190°C). Grease a 9-inch pie dish with olive oil.
  • Grate the zucchini and squeeze out excess moisture using a clean kitchen towel.
  • In a large bowl, mix grated zucchini, diced onion, olive oil, and eggs until blended.
  • Stir in flour, baking powder, salt, and black pepper until just combined.
  • Fold in the shredded cheese and fresh herbs if using. Mix until evenly distributed.
  • Pour the mixture into the prepared pie dish and smooth the top.
  • Bake for 40 to 45 minutes, or until golden brown and a toothpick inserted comes out clean.
  • Let the pie cool for a few minutes before slicing. Serve warm or at room temperature.

Notes

Use fresh zucchini for the best flavor. Remove excess moisture to prevent a soggy crust. Can be made ahead of time and reheated.
