Ingredients
  

  • 4 cups grated zucchini
  • 1 cup finely chopped onio
  • 1 cup finely chopped green bell pepper
  • 1/4 cup salt
  • 2 cups cider vinegar
  • 1 cup sugar
  • 1 tablespoon mustard seeds
  • 1 teaspoon turmeric
  • 1 teaspoon black pepper
  • 1 teaspoon coriander seeds

Instructions
 

  • Grate the zucchini and place it in a large colander. Sprinkle salt over the zucchini and let it drain for at least an hour.
  • Rinse the zucchini under cold water to remove excess salt and let it drain again. Pat it dry with paper towels.
  • In a large pot, combine the drained zucchini, chopped onion, green bell pepper, cider vinegar, sugar, mustard seeds, turmeric, black pepper, and coriander seeds.
  • Bring the mixture to a boil over medium heat. Once boiling, reduce the heat to low and let it simmer for 30-40 minutes, stirring occasionally.
  • Once the relish thickens to your liking, remove it from the heat and let it cool slightly before transferring to sterilized jars.
  • Seal the jars with lids and store them in the refrigerator for up to a month, or process in a water bath for longer shelf-stable storage.

Notes

Ensure to use a food processor for quick grating. Allow the relish to sit for at least 24 hours for the flavors to marry.
